Madrid's Daiquiri Trail Highlights Summer Cocktail Revival

The daiquiri, a lemon‑and‑sugar cocktail made with Cuban rum, is being promoted through a curated bar route across Madrid. Historically credited to American mining manager Jennings Cox in the late 19th century, the drink’s legacy is traced from Havana’s El Floridita to the Spanish capital by bartender Constante Ribalaigua and later popularised by Hemingway.

In recent weeks, bars such as Vergara, 1862 Dry Bar and Shift Public House have joined a “Daiquiri Week” celebrating the drink. Veteran mixologist Javier Rufo at the iconic Bar Más Bonito, a longtime haunt of Perico Chicote, prepares the classic recipe with Bacardí rum, fresh lemon juice and a house‑made syrup, offering locals a nostalgic summer refreshment.
