Maerz brothers to operate Hotel Eberhards am Wasser

Chef Benjamin Maerz and sommelier Christian Maerz have taken over the operation of Hotel Eberhards am Wasser in Bietigheim-Bissingen. The Maerz brothers, known for the one-star rated MAERZ restaurant, will transition from their current establishment to the new lease starting September 9, 2026.

The restaurant is scheduled to reopen on September 23, 2026. Previously, the facility had only maintained its hotel operations following a preliminary closure of the restaurant in April 2026. The current manager, Bastian Fischer, is stepping down from operative duties to pursue new professional challenges.

Until the end of the year, the location will feature a "Maerz Pop-Up am Wasser," offering a mix of modern and urban dishes, including the popular "MAERZ BURGER." A brand-new concept with updated interior design and a new name is planned for the upcoming year.
