Malta culinary guide shared by local chef Cliff Borg

Chef Cliff Borg, group executive chef for the Maltese hospitality brand Lifestyle Group, provides a culinary guide to Malta, highlighting the island's diverse influences from Italy, Sicily, and North Africa.

Borg, who recently led the opening of the Michelin-starred Rosami in Balluta Bay, is currently developing nine new restaurant concepts, including the beach club Bagatelle and the Spanish-Mediterranean restaurant TATEL.

Key recommendations for visitors include trying authentic Maltese pastizz, a traditional flaky pastry filled with ricotta or seasoned peas, which can be found in various local bakeries and pastizzerias. Borg also suggests exploring the architecture of Valletta and utilizing traditional Maltese boats, such as the luzzu or the dgħajsa, to navigate the coast and visit Gozo.
