Martin Auer opens first international bakery in New York SoHo

Austrian baker Martin Auer has expanded his family business, which operates 45 locations in Austria, to New York City with the opening of Rye by Martin Auer in Manhattan’s SoHo district. The bakery focuses on a single core product: a 1.5-kilogram loaf of 100% organic rye sourdough bread.

The bread has drawn significant attention and controversy due to its $60 price tag. While this is considerably higher than the average price for artisanal sourdough in New York, Auer and his son, Tim Auer, justify the cost by citing the high expenses of operating in SoHo and the fact that all raw materials, including the flour, are imported from Austria.

Despite the price debate, the shop has seen long lines of customers. The bakery’s concept emphasizes quality and time, with a fermentation process lasting up to 24 hours. The store also features high-end details, such as a counter made from a single tree trunk sourced from Styria.
