Mateusz Gessler advocates for mandatory tipping in restaurants
Restaurateur Mateusz Gessler has expressed the view that tipping should be a mandatory practice for all restaurant guests. He argues that tips are a vital source of income for service staff, noting that even when a service charge is included in the bill, it is often treated as restaurant revenue subject to taxation, meaning the full amount does not always reach the employees.
Gessler, who has experience working both in kitchens and on the floor, stated that he personally leaves tips regardless of whether a service fee is applied. He highlighted that in the United States, tipping is a fundamental component of a server's salary, whereas in Europe, it is typically viewed as a discretionary reward for good service, with the employer responsible for base wages.
