McDonald's original fries recipe traced to beef tallow origins
The first McDonald's fries were cooked in pure beef tallow at the original restaurant, giving a distinctive taste and texture that many taste experts consider the best mass‑produced fries ever.
A public‑health campaign led by food‑industry activist Phil Sokoloff in the early 1990s forced the chain to replace the tallow with trans‑fat vegetable oil, changing the flavor. Enthusiasts, former employees and culinary historians have been trying to recreate the lost formula, sometimes referring to the secret “Formula 47” and using double‑frying in a blend of fats. One former employee recalled, “The fries were very good,” in a 1995 interview, and a 79‑year‑old ex‑staff member has shared details of the original preparation.
