Mediterranean Cuisine Projects Expand in Mexico and Spain

Grupo Castellano in Mexico has launched its first Festival Mediterráneo, a seasonal menu running from 7 July to 7 August 2026. The festival features more than 15 dishes inspired by Spanish, French, Italian and Greek cuisines and is developed by guest chefs Atala Olmos and Guy Santoro together with the chain’s own culinary team.

In Valencia, Spain, the Cámara Valencia is seeking public and private funding to create an international school of high‑end Mediterranean cuisine. The initiative aims to become a benchmark institution – described by officials as the “Berkeley of Mediterranean gastronomy” – and follows a first year in which the Mediterráneo Culinary Center received roughly €9 million in public aid. The new academy’s budget will depend on the level of financing secured from ministries and private investors.
