Menya Taiga opens duck ramen shop in Mine City

Menya Taiga, a new ramen shop specializing in duck-based broth, has opened in Mine City, Yamaguchi Prefecture. The restaurant features a signature “Duck Soy Sauce” ramen, which utilizes duck meat from Yamagata Prefecture simmered for six hours to create a deep, flavorful soup.

The menu includes specialty noodles from Miura Seimen, with whole wheat thin noodles served for the duck soy sauce option and high-hydration flat noodles for the duck white soup (tori paitan) option. The establishment offers a cafe-like atmosphere with both counter and table seating.
