Mexican towns roll out digital guides and specialty markets to boost regional cuisine

Meanwhile, the historic town of Bernal in Querétaro is promoting its signature gorditas made from broken‑corn masa. Known for a slightly crunchy texture and a variety of fillings, these gorditas are sold throughout the town’s bustling gastronomic market, drawing tourists seeking authentic regional flavors.
Both initiatives reflect a broader effort by Mexican municipalities to use technology and local specialties to stimulate tourism and support small‑scale food producers.
