Mexico legislature declares Villa Guerrero ‘Pan de Pulque’ cultural heritage

The LXII Legislature of the State of Mexico has approved a declaration naming the production of ‘Pan de Pulque’ from Villa Guerrero as Intangible Cultural Heritage of the State of Mexico. The initiative, led by the Movimiento Ciudadano parliamentary group and coordinated by Deputy Juan Manuel Zepeda Hernández, aims to promote, conserve, and safeguard this artisanal tradition.

The declaration recognizes the collective knowledge required for this practice, specifically the use of pulque as a natural ferment, the control of fermentation times, manual kneading, and oven management. These skills have been passed down through generations of local bakers.

Deputy Maricela Beltrán Sánchez emphasized that the measure should go beyond official recognition to include practical support, such as dedicated budgets, workshops for youth, gastronomic routes, and actions to improve the economic dignity of those maintaining the tradition.
