Michelin Guide 1986: A La Cote St. Jacques earns three stars
The 1986 Michelin Red Guide for France has been released, maintaining the three-star status for most elite gourmet restaurant owners. A La Cote St. Jacques in Joigny was the only establishment to be elevated to three-star status this year, earning praise for its mushroom and foie gras salad, celery julienne, and young pigeon.
In Paris, the restaurants Laurent and Ledoyen saw their ratings downgraded from two stars to one star. Despite these changes, twenty restaurants in Paris, including Taillevent, Lucas Carton, Tour d’Argent, and Jamin, retained their prestigious three-star ratings.
In the Centre-Val de Loire region, notable gastronomic destinations include Fleur de Loire in Blois, led by chef Christophe Hay, which focuses on ultra-local sourcing, and Assa, which offers a contemporary approach to local products. The Auberge du XIIème Siècle in Saché also remains a recognized location for regional cuisine.
