Miki Bakkerij wins best bâtard award at De Broodsalon

Miki Bakkerij, a sourdough bakery located on the Hembrugterrein in Zaandam, won the competition for the best bâtard at De Broodsalon in Amsterdam. The bakery, which opened in September 2025, beat out twenty other bakers in a blind tasting judged by a panel that evaluated taste, crust, crumb, structure, lightness, aroma, and appearance.

Owned and operated by Cox and Niels Bandringa, the bakery is part of the De Enclave redevelopment project, allowing the family to combine their residence with their business. The winning bâtard received a score of 8.5, with the jury reaching a unanimous decision. Cox Bandringa emphasized a focus on high-quality, simple bread intended for daily consumption.
