Minnesota State Fair announces 2026 attractions and new foods

Organizers of the 2026 Minnesota State Fair have announced several new attractions, rides, and food offerings for the upcoming event, which runs from August 27 through Labor Day, September 7, 2026.

New entertainment features include the ‘Ultimate Dinosaurs’ experience at the North End Event Center. This free exhibit will include real fossils, life-size skeleton casts, interactive augmented reality, and appearances by paleontologists. Additionally, the fair will introduce the ‘America Wheel,’ a 230-foot observation Ferris wheel designed to commemorate America’s 250th birthday.

On the culinary front, several new pickle-themed items will be available, including pickle pie at LuLu’s Public House, pickle and vine sparkling wine from Cannon River Winery, pickle lemonade at Shanghai Henri’s, a dill cookie at Holman’s Table, and a dill pickle seltzer at Swine & Spuds.
