Moët Hennessy and Analog Devices partner to use AI in winemaking

Moët Hennessy, Analog Devices (ADI), and the University of California, Davis, have announced a collaboration to integrate artificial intelligence and sensor technology into viticulture and wine production. The initiative aims to enhance wine quality and vineyard vitality by detecting and interpreting volatile chemical signatures emitted by vines, must, and wine.

The project utilizes a technological platform developed by Analog Devices, which traces its roots back to research conducted at the Massachusetts Institute of Technology (MIT). By analyzing chemical patterns, the system provides winemakers and viticulturists with early warnings regarding biological processes and potential quality risks.

A primary success of this collaboration involves the early detection of Fresh Mushroom Aroma (FMA), a complex quality defect. Using a unique dataset compiled by Moët Hennessy’s Robert-Jean de Vogüé Research Center, researchers trained machine learning algorithms to recognize the chemical signatures associated with FMA. The technology successfully identified high-risk samples at an early stage, well before the defect could be detected through traditional methods.
