Naples culinary traditions: Marinara and fried pizza

Naples maintains a rich culinary tradition centered on iconic pizza varieties, including the historic Marinara and the popular fried pizza.

The Marinara is one of the city's oldest specialties, dating back to at least the mid-18th century. Despite its name, it contains no seafood; instead, it relies on a minimalist combination of dough, tomato, garlic, oregano, and olive oil. The Associazione Verace Pizza Napoletana (AVPN) updated its standards in 2024 to protect this tradition, specifying precise measurements for ingredients like San Marzano tomatoes to ensure authenticity.

In contrast to the oven-baked varieties, pizza fritta represents the city's more accessible, street-food roots. Historically a staple for those without access to wood-fired ovens, it consists of a simple dough fried in oil and filled with ingredients such as ricotta, salami, or provola. While the Posillipo district is known for its scenic views of the Gulf, the fried pizza remains a deeply grounded element of daily Neapolitan life.
