NASA astronauts grow and harvest fresh vegetables on ISS

NASA astronauts Anil Menon and Jessica Meir have successfully harvested and prepared fresh vegetables aboard the International Space Station (ISS). Using NASA’s Veggie Plant-Growth Chamber, the duo grew kale and wasabi mustard over a period of approximately one month.

In a video shared on social media, Menon demonstrated a ‘farm-to-table’ approach by harvesting the leaves to create a meal, describing it as one of the best meals prepared on the station. This research is part of ongoing NASA studies to understand how plants respond to microgravity environments.

These experiments are critical for planning long-duration space missions to the Moon, Mars, and beyond. Developing the ability to grow food in space would reduce reliance on Earth-based supply missions, provide essential nutrients that are often lost in pre-packaged foods, and potentially improve the mental well-being of astronauts during extended stays in space.
