Natura restaurant in Kluszkowce gains attention for signature pork cutlet

The new Natura restaurant, part of Magda Gessler’s Apartel Natura in Kluszkowce, has gained significant attention following a review by YouTuber Książulo. The establishment, located near Lake Czorsztyn, offers a variety of dishes including Black Angus beef tartare, poached eggs with sheep milk (żętyca), and various soups such as cucumber soup with smoked trout mousse.

One of the standout items is the “schabowy” (pork cutlet), which has become a viral sensation. Chef Piotr Bińczycki, the creative chef and gastronomy director at Natura, shared his philosophy behind the dish. He rejects the common practice of pounding meat thin, instead insisting that a proper cutlet must be thick, include a bone to retain juices, and have a delicate layer of fat to prevent drying.

Other menu highlights include trout served with caramelized zucchini, duck breast with Silesian dumplings, and a beef tenderloin stroganoff served with porcini sauce and buckwheat popcorn.
