New culinary developments announced in Japan

Several new food service developments have been announced in Japan. Matsunoya is launching a new ‘Loin and Vegetable Mixed Sauce Katsudon’ on September 2, 2026. The dish features thinly sliced loin cutlet paired with vegetable cutlets made from eggplant, pumpkin, and lotus root, served with a special sauce. Options include toppings such as grated radish or a soft-boiled egg.

In Nagoya, a new specialty shop for fresh hiyamugi noodles, named Hononoma, opened on July 25, 2026. Located near Nagoya Station, the shop operates during lunch hours in a shared space. The menu focuses on fresh noodles made from Aichi-grown ‘Kinuakari’ wheat, served with a signature dashi broth made from flying fish (ago). The shop also offers various rice bowls, including options featuring Tahara pork and Shizuoka salmon.
