Niigata celebrates new rice harvest with seasonal culinary offerings
The arrival of the new rice harvest is being celebrated in Niigata, Japan, with local establishments highlighting the seasonal quality of freshly harvested grains.
In Niigata City, the restaurant Echigo Takuzou recently opened in a 70-year-old former traditional kitchen in the Furumachi district. The establishment focuses on premium Koshihikari rice sourced from regions such as Minamiuonuma, Sado, and Murakami, which is cooked in heavy iron pots to achieve a glossy texture. The menu features local ingredients, including Asahi pork and aged salmon.
Other local hospitality venues, such as the Furuyubou Gensenkan, have also noted the superior quality of the new rice, reporting that the grains maintain their luster and texture throughout the day. Some establishments are even utilizing mineral spring water for the rice washing and cooking processes to enhance the dining experience.
