Ninben and ISEKADO launch katsuobushi-infused craft beer
Ninben, a long-standing bonito flake specialist, and ISEKADO, a craft brewery, have collaborated to release a new product called ‘Ibushi-dashi’. The beer is scheduled to launch on October 8.
Designed as a Farmhouse Ale, the beverage incorporates dashi made from Ninben’s traditional Honkare Katsuobushi, which is combined with wort during the brewing process. The recipe also utilizes ISEKADO’s original wild yeast, ‘KADOYA1’, and smoke malt to create a profile featuring smoky and spicy nuances alongside the umami of the bonito dashi.
The product will be available through the ISEKADO online shop and at various locations in Tokyo, including the Mie Terrace antenna shop, Ninben’s Nihonbashi main store, and Nihonbashi Dashi-ba Hanare. The retail price is set at 770 yen for a 350ml bottle.
