Nobu appoints new Executive Chefs in Kuala Lumpur and Singapore

Nobu has announced new culinary leadership at its locations in Kuala Lumpur and Singapore.

In Kuala Lumpur, Mauro Baldari has begun his tenure as Executive Chef. His approach focuses on the restaurant’s Japanese-Peruvian philosophy, utilizing techniques that balance acidity and texture. The menu features items such as Nori Tacos with lobster and tuna, Shima Aji Goma Ponzu, and Wagyu Tenderloin with a truffle crust.

In Singapore, Four Seasons Hotel has welcomed Belkacem Boubekeur as the Executive Chef of Nobu Singapore. Boubekeur brings over 20 years of international experience, having previously held roles at Nobu Monaco and Nobu Dubai. His culinary background includes French, Japanese, and Italian influences, with a particular focus on premium ingredients and traditional French techniques.
