Norwegian salmon remains central to Italy's sushi market
Norwegian salmon continues to dominate the sushi market in Italy, maintaining its status as the preferred fish for sushi preparations across generations, from Millennials to Gen Z.
Data presented at the Norwegian Seafood Seminar 2026 highlights the deep integration of sushi into Italian dietary habits. According to Circana, nearly 70% of salmon consumption in the out-of-home sector is linked to sushi. This follows a trend noted in 2019, when salmon sales within the sushi segment grew by 11.5%.
The impact is also visible in the retail sector. Nielsen research indicates that by 2025, the value of sushi in consumer retail spending reached 166.5 million euros.
