Nova Mamma brings Neapolitan pizza to Cognac

Mathilde Giraudet has opened Nova Mamma, a pizzeria in Cognac specializing in authentic Neapolitan pizza. To achieve the signature light and soft texture, Giraudet utilizes a dough that rests for 24 to 48 hours.

Giraudet trained at the École Pizza Jean-Jacques Despaux in Lannemezan before refining her skills in Naples through the Verace Pizza Napoletana certification, which follows strict preparation standards. Her menu features approximately twenty pizzas, ranging in price from €8.50 to €19.50, including a weekly special. While fresh products are sourced locally in France, most charcuterie, cheeses, sauces, and pantry items are imported from Italy. Giraudet also competes in the French Neapolitan Pizza Championship, where she previously secured ninth place.
