Nut consumption: Bitter taste may indicate toxic mycotoxins

Consuming nuts that taste bitter can pose significant health risks due to the potential presence of mycotoxins. These toxic substances are produced by certain molds, particularly when nuts are stored in warm and humid conditions. Common examples include aflatoxins, which can be found in pistachios and peanuts, though they occasionally appear in walnuts as well.

Mycotoxins can lead to serious health issues, including damage to the liver and kidneys, diarrhea, vomiting, and a weakened immune system. In severe cases, they may promote the development of cancer. While discoloration or unpleasant odors are warning signs, mycotoxins are sometimes undetectable by sight or smell. Therefore, if a nut tastes bitter, it should be spat out immediately.

In contrast, unsalted and natural peanuts offer various nutritional benefits. Although technically legumes rather than true nuts, they are rich in magnesium, protein, unsaturated fatty acids, fiber, and essential vitamins such as B-vitamins and Vitamin E.
