Thermal processing can enhance the bioavailability of certain nutrients in specific foods. While excessive boiling may deplete heat-sensitive vitamins, cooking can break down plant cell structures to make antioxidants and minerals more accessible.

Key examples include:

- Tomatoes: Heating increases the availability of lycopene, a powerful antioxidant. Preparing tomatoes with a small amount of quality oil can further aid absorption. - Carrots: Cooking or steaming carrots can make beta-carotene, which the body converts to Vitamin A, more accessible. - Spinach: Certain nutrients become more available through appropriate heat application.

For thickening dishes without using traditional flour and oil-based roux—which can cause digestive discomfort—healthier alternatives include mashing cooked vegetables or legumes, grating potatoes or carrots into the pot, or using grains like rice, barley, and millet that release starch during cooking. Peas serve as an excellent thickener while providing significant protein, fiber, and essential minerals like potassium and magnesium.
