Nutrition experts discuss legume benefits and food safety warnings
Dietary experts are highlighting the nutritional benefits of legumes and warning against certain food combinations that may cause health issues during the winter season.
Betül Merd, a dietitian at Memorial Kayseri Hospital, notes that legumes such as beans, chickpeas, lentils, and peas are highly nutritious, economical, and accessible. She emphasizes that these foods are rich in plant-based protein and fiber, which support muscle maintenance, intestinal health, and satiety. Additionally, their complex carbohydrate and fiber content can assist in blood sugar control.
Conversely, health warnings have been issued regarding the consumption of pickles (turşu) with certain foods. Combining pickles with fresh milk or dairy products can disrupt acid balance in the stomach, potentially leading to nausea and vomiting. There is also a risk of histamine poisoning when consuming pickles alongside reheated or aged fish. Furthermore, combining pickles with processed meats like sucuk or sausage may pose risks due to the presence of nitrites and nitrates.
