Nutritional and gardening benefits of cooked pasta
Research and expert advice suggest that cooked pasta can offer health benefits when consumed after being cooled. When pasta is refrigerated, some of its starch undergoes a structural change, transforming into resistant starch. This type of starch acts similarly to fiber, passing through the small intestine to the large intestine, where it supports a healthy gut microbiome. Additionally, this process may influence post-meal blood sugar levels.
Beyond nutrition, pasta cooking water can be repurposed for gardening to reduce water waste. While it is not a substitute for regular fertilization, the starch-rich liquid can be used for irrigation if specific precautions are taken. To avoid harming plants, the water must be completely unsalted, as salt inhibits root development and causes leaf browning. Furthermore, the water must be cooled to room temperature and must not contain oils, butter, spices, or dairy, which can cause mold growth on soil surfaces.
