Nutritional and storage insights for bananas

Nutrition expert Dr. Nicolai Worm provides guidance on consuming bananas for breakfast. While critics point to a 25 percent sugar content and acidity as potential issues for blood sugar and acid-base balance, Worm suggests that the method of consumption is key. To prevent rapid blood sugar spikes, bananas should be combined with healthy fats, proteins, or fiber, which slows digestion and the absorption of sugar into the bloodstream.

Regarding preservation, research suggests that storing bananas in a sealed glass jar is more effective than wrapping the stems in aluminum foil. Bananas ripen due to the production of ethylene gas, a process accelerated by oxygen. Storing the fruit in a closed container limits oxygen exposure, thereby reducing ethylene production and slowing the ripening process. In comparative tests, bananas kept in glass remained fresh and yellow significantly longer than those treated with foil.
