Nutritional benefits of consuming specific vegetables raw
Certain vegetables retain higher levels of nutrients when consumed raw compared to when they are cooked. Key examples include broccoli, garlic, beets, kale, and bell peppers. Dietitians note that heat can diminish essential vitamins and antioxidants; for instance, a raw red bell pepper contains more than twice the vitamin C of an orange.
Broccoli, a cruciferous vegetable, is particularly noted for its antioxidant and anti-inflammatory compounds such as sulforaphane, glucosinolates, and indole-3-carbinol. To maximize these benefits, experts suggest cutting broccoli before cooking and allowing it to rest to trigger enzymatic processes that form sulforaphane. While steaming is identified as a method that preserves more nutrients than boiling, raw consumption remains a highly effective way to ensure the intake of folate, vitamins A, C, and K, as well as calcium, iron, and potassium.
