Nutritional benefits of legumes and whole food consumption
Health experts and recent research highlight the significant nutritional value of legumes and the consumption of entire fruits and vegetables. Legumes, such as beans, chickpeas, lentils, peas, and broad beans, serve as excellent sources of plant protein, fiber, vitamins, and minerals including iron, magnesium, and potassium. Regular consumption can assist in managing cholesterol and blood sugar levels, potentially preventing cardiovascular diseases and diabetes.
A study from King's College London, published in the International Journal of Food Sciences and Nutrition, suggests that consuming the parts of produce often discarded, such as skins, can significantly increase fiber intake. This is particularly relevant as many populations fail to meet the recommended daily intake of 30 grams of fiber. The research notes that utilizing these parts could also help reduce the 10 million tons of food wasted annually, much of which consists of fresh produce.
