Nutritional benefits of seasonal pesticide-free vegetables
Certain seasonal vegetables harvested during the autumn equinox are noted for being naturally resistant to pests, reducing the need for chemical pesticides.
Củ niễng, often referred to as ‘water ginseng,’ grows in natural mud and water environments. It is rich in fiber, vitamins, and folic acid, which can support digestion and heat clearance. A recommended dish is củ niễng stir-fried with shredded pork.
Khoai môn (taro) is another autumn harvest option. Because it grows deep underground with a thick natural skin, it is less susceptible to pests and is considered a safe, low-pesticide food option. It can be prepared in dishes such as steamed pork ribs with taro.
