Nutritional benefits of spinach and leafy greens

Nutritional experts highlight that the benefits of spinach depend significantly on whether it is consumed raw or cooked. Raw spinach preserves higher levels of heat-sensitive nutrients, such as vitamin C and folate. However, cooking spinach can reduce oxalates, which makes minerals like iron and calcium easier for the body to absorb.

Additionally, cooking spinach with fats, such as oil, can increase the bioavailability of fat-soluble vitamins like vitamins A and K. While boiling may cause water-soluble vitamins to leach into the cooking liquid, different preparation methods offer distinct nutritional advantages.

To diversify nutrient intake, experts suggest rotating spinach with other leafy greens. Kale is noted for its high vitamin K, vitamin C, and calcium content, though its bitterness can be mitigated by using frozen varieties or pairing it with tropical fruits. Romaine lettuce provides folate and vitamin A with a mild flavor suitable for smoothies, while chard offers significant magnesium, potassium, and vitamin K.
