The impact of breakfast on blood glucose levels is determined by the quality and quantity of carbohydrates, fiber, and portion sizes, rather than whether the meal is categorized as sweet or savory.

Research indicates that breakfasts with a lower glycemic index or glycemic load result in lower acute glucose increases during the first two hours after eating. While adding protein to a carbohydrate-rich meal can mitigate the acute glycemic response, it often leads to a higher insulin response as the body produces more insulin to manage the sugar load.

Nutritional guidelines for diabetes emphasize choosing minimally processed foods rich in fiber over simple sugars and refined flours. A savory breakfast can still cause high glycemic spikes if it contains refined white bread and processed meats, just as a sweet breakfast can be metabolically healthier if composed of ingredients like plain yogurt, oats, and nuts.
