Nutritional differences in peppers and food storage optimization

Peppers of different colors—red, yellow, and green—are actually the same plant at different stages of maturity. Green peppers are immature, while red peppers represent the fully ripe stage. As the fruit matures, chlorophyll degrades and is replaced by carotenoids and flavonoids, which serve as potent antioxidants. Consequently, the concentration of beneficial substances generally increases as the pepper ripens.

Effective food preservation also depends on proper refrigerator organization. To maintain safety and reduce waste, the refrigerator should be kept at 4°C or below. Upper shelves are best suited for ready-to-eat foods like yogurt and cooked dishes, which should be kept in closed containers to prevent cross-contamination from raw meats. Dairy products, such as milk and cheese, are better stored on internal shelves where temperatures remain more stable, rather than in the door where temperature fluctuations are more frequent.
