Nutritional research links diet to mental health and vitamin enrichment

Recent nutritional studies highlight the connection between diet and mental well-being, as well as advancements in food science through fermentation.

A small study involving 20 participants suffering from depression and anxiety found that reducing the consumption of ultra-processed foods by 85% over four weeks led to improvements in depression and anxiety scales. However, researchers noted methodological limitations, including a lack of specific data regarding scale scores and participant group assignments.

In food science research, Dr. Lu Gao was awarded the Heinrich-Stockmeyer-Wissenschaftspreis for work conducted between the Max-Rubner-Institut and Hochschule Fulda. The research demonstrated that co-fermentation can be used to biologically enrich plant-based alternatives, such as oat drinks, with Vitamin B12.

Additionally, research published in Communications Biology examined how fermented protein foods influence muscle metabolism through protein digestion and the release of bioactive peptides, though direct evidence for increased muscle mass in humans remains limited.
