Nutritionists promote nutritional gastronomy for weight management
Nutritionists at the XVII Argentine Nutrition Days and V Obesity Days, organized by the Argentine Nutrition Society (SAN) at the Catholic University of Argentina, emphasized the importance of nutritional gastronomy. This field aims to combine healthy eating with palatable preparations to help individuals manage weight effectively.
Alberto Arribas, a nutritionist and member of the SAN, suggests that successful weight management requires moving away from focusing on isolated nutrients and instead focusing on the construction of high-quality food matrices. This approach involves combining foods to ensure nutrient diversity and optimal absorption. For example, cooking tomatoes with olive oil can enhance lycopene absorption.
Experts recommend that dietary plans should not be restrictive or demonize specific foods. Instead, they suggest practical strategies such as prioritizing seasonal and budget-friendly foods, using culinary techniques to maximize bioavailability, and utilizing freezing to store pre-cut or cooked ingredients for easier meal preparation.
