Osso launches Filipino‑Italian fusion menu in the Bay Area
Chefs Daniel Malillos and his wife Marise have opened Osso, a restaurant that blends classic Filipino dishes with Italian culinary techniques. Malillos, born in the Philippines and trained in Italy, applies farm‑to‑table principles he learned at a Parma agriturismo, using seasonal vegetables and simple ingredients. The menu features an Italian‑styled pancit inspired by spaghetti aglio‑olio e peperoncino, as well as chicken inasal, fried wings, tapsilog, lumpia and Asian cabbage salad. The couple’s motivation stems from personal family health concerns, prompting a focus on wellness‑centered cooking. After moving to the United States—Marise to the Bay Area in 2021 and Malillos following his immigration—they opened the eatery to offer a cross‑cultural dining experience that reflects both their heritage and culinary training.
