Renowned pastry chef Osvaldo Gross visited Córdoba, Argentina, for an event held in collaboration with Fundación OSDE. Alongside Leandro Alberione, owner of the Cherry Season chain, Gross discussed his professional trajectory and the evolution of culinary trends.
Gross, who holds degrees in geochemistry and mineral chemistry, explained how his scientific background allows him to apply precision and reproducibility to his recipes. During the discussion, he addressed the impact of social media on gastronomy, suggesting that current digital content often focuses more on “showing” rather than “educating.”
Other key topics included the rise of afternoon tea (merienda) as a significant social activity, particularly among students and young adults, and a shift in consumer preferences toward healthier options with reduced sugar and flour. The event, which saw tickets sell out within two hours, also highlighted the importance of ingredient quality and presentation in the modern dining experience.
