Paella: Traditional techniques and authentic Valencian recipes
Paella is a traditional rice dish originating from the Valencia region of Spain. While many tourist versions focus on seafood, authentic Paella Valenciana is a land-based dish typically featuring chicken, rabbit, flat green beans, butter beans, and saffron-tinted short-grain rice.
Key technical aspects of preparing high-quality paella include using a wide, shallow pan known as a ‘paellera’ to ensure even cooking and the development of ‘socarrat’—the toasted, caramelized crust at the bottom of the pan. For optimal texture, specific rice varieties like Bomba or Calasparra are recommended because they absorb stock without becoming mushy. A critical rule in the cooking process is to avoid stirring the rice once it has been spread across the pan, as stirring releases starch and can result in a texture similar to risotto.
