Traditional culinary practices in Pará involve specific techniques to manage the textures and flavors of regional ingredients like açaí and jambu.

Blended açaí is prone to physical separation within 30 minutes due to its unstable emulsion of water, fat, and pulp particles. Thicker pulp maintains a uniform appearance longer by slowing the movement of fat droplets, whereas diluted mixtures separate more rapidly, leaving a glossy layer on top and liquid at the bottom.

For jambu, a short 20-second blanching process can soften the plant and reduce the intensity of its characteristic sensation without losing its flavor. This effect is linked to spilantol, a compound concentrated primarily in the flowers. Selecting fresh jambu with firm stems and intact yellow flowers is essential for maintaining quality in dishes like tacacá.
