Parco delle Querce launches Aestatis summer panettone
Chefs Cristiano Germani and Simona Foderini, owners of the Parco delle Querce agriturismo, have launched ‘Aestatis’, a seasonal panettone designed for the summer months. Part of the LieviTuscia project, the initiative aims to destagionalize the traditional holiday dessert by using ingredients that reflect the summer season and the local territory.
The 750-gram panettone features a blend of flavors from the Tuscia, Maremma, and Tyrrhenian coast regions. Key ingredients include artisanally candied melon from the Maremma laziale, citron, and lemon from the Tyrrhenian coast. The aromatic profile is further enhanced with strawberry tree honey, rosemary, and basil to create a balance of citrus and Mediterranean scents.
The production follows a slow 36-hour process using a sourdough starter that is over twenty years old, involving three preparatory refreshments to ensure a soft and light structure.
