Peru's regional food fairs promote local dishes during Fiestas Patrias celebrations

In Huamanga, Ayacucho, the municipal government set up a gastronomic fair in the María Parado de Bellido park, featuring ten local vendors offering traditional dishes such as chicharrón, puca picante, and beverages like chicha de jora and chicha de siete semillas. The fair runs through July 29, targeting tourists and residents during the national Fiestas Patrias holiday.

Meanwhile, in Huaraz, Ancash, municipal authorities are pushing to have the traditional chocho salad, known as cevichocho, officially recognized as the city’s flagship dish. As part of the provincial anniversary, organizers prepared the largest cevichocho in Peru, using 200 kg of chocho to serve roughly 1,000 portions to locals and visitors in the Plaza de Armas. The initiative highlights the dish’s nutritional benefits and aims to boost culinary tourism and regional identity.
