Peruvian restaurants highlight regional flavors and culinary traditions

Peruvian culinary establishments are highlighting the country's diverse regional flavors through new menus and traditional offerings.

Voga Lima Restaurant, located in Miraflores, has introduced a new menu titled ‘Texturas y Colores’. Led by executive chef Javier Rondón, the menu aims to showcase the biodiversity of the coast, Andes, and Amazon. The culinary approach focuses on respecting the essence of ingredients while utilizing creative techniques such as fermentation, dehydration, and infusion to promote sustainable use of components like peels, seeds, and roots.

Meanwhile, La Isla Escondida, a family-run restaurant with over 30 years of history, continues to focus on traditional Creole and seafood recipes. Popular dishes at the establishment include arroz con pato, cabrito a la norteña, mixed ceviche, and a special crab causa, all designed to maintain the essence of authentic Peruvian flavors.
