Piedmont culinary traditions highlight autumn seasonal flavors
The Piedmont region of Italy is showcasing its seasonal autumn offerings through new culinary menus and gastronomic pairings. At Ristorante Guarini in Turin, Chef Luca Varone has introduced a menu centered on traditional preservation techniques and local ingredients. Key dishes include a semi-dry tomato and ramassin plum preparation using dehydration and fermentation, as well as pasta buttons filled with caramelized onion and black truffle.
In the Acqui wine region, the Consorzio Tutela Vini d’Acqui is promoting a gastronomic itinerary designed to pair various expressions of Brachetto wine with local specialties. The pairings feature regional staples such as white truffle, Nizza Monferrato cardoon, agnolotti del Plin, and porcini mushroom risotto. The initiative highlights how the aromatic notes of Acqui DOCG Rosé, still, and sweet Brachetto can complement both savory and sweet Piedmontese dishes.
