Podlaskie traditional Lenten cuisine

Traditional Lenten cuisine in the Podlaskie region is characterized by its reliance on plant-based ingredients and pantry staples. Historically, these dishes were shaped by religious traditions, such as Lent, and the practical need to use preserved goods like potatoes, grains, cabbage, peas, mushrooms, flour, poppy seeds, and oil.

Commonly prepared meals included sour rye soup (żur) without cream, borscht, mushroom soup, oat groats, cabbage with peas, pierogi with cabbage and mushrooms, and buckwheat with onion. These recipes avoided meat, lard, milk, cream, butter, and cottage cheese, often relying on sourdough, dried mushrooms, onions, garlic, and various spices to build flavor.
