Poha Breakfast Dish Spotlighted with Healthy Brown‑Rice Recipe and Indore Street‑Food Appeal

A new recipe promotes brown‑rice poha as a healthier alternative to traditional polished poha. Made from whole‑grain brown rice, it retains more dietary fiber and nutrients. The dish uses a simple tempering of mustard seeds, asafoetida, curry leaves and green chilies, then combines sautéed onions, mixed vegetables, turmeric and the rice flakes, finishing with lemon juice, fresh coriander and grated coconut.

In the central Indian city of Indore, poha is celebrated as a beloved street‑food breakfast. Local vendors flavor the flattened rice with mustard seeds, turmeric, green chilies and peanuts for crunch, and serve it topped with sev, fresh coriander and sometimes pomegranate seeds or coconut. The street‑side experience and regional twists make Indori poha a distinct culinary icon both for residents and tourists.
