Polish cooks unveil tips for moist baked and non‑breaking fried fish

Polish home cooks recommend baking cod under a sealed cover with a vegetable base to retain moisture. The method uses parchment paper or baking paper to create a micro‑climate, allowing steam from vegetables, lemon juice and oil to circulate and keep the lean fish tender and flaky.

For pan‑frying delicate fish, a two‑step process is advised: briefly sear the fillet on each side, then finish cooking in a 180 °C oven for several minutes. Drying the fillet beforehand, using a hot pan, and optionally starting with the skin side helps achieve a crisp exterior while preventing the flesh from falling apart.
