Polish culinary traditions feature seasonal recipes and historical soups
Traditional Polish culinary practices are being highlighted through seasonal recipes and historical recreations. One featured method involves a one-pot vegetarian pasta dish using grated zucchini, a creamy butter base with garlic and thyme, and uncooked pasta cooked directly in broth to ensure a flavorful, non-dry result.
Additionally, the historical soup known as pejzanka is gaining renewed interest. Originally a peasant dish made from seasonal vegetables like cabbage, kohlrabi, onions, and potatoes, it was also served at high-society events, such as the wedding of Michał and Maria Zamoyski in Kozłówka exactly 100 years ago. The soup is traditionally thickened with potato purée rather than flour or cream, creating a dense, warming consistency suitable for autumn.
