Polish guides recommend smaller, late-season strawberries for better jam

Two Polish food articles explain that the most suitable strawberries for homemade jam are the smaller fruits harvested at the end of the season. These berries contain less water, are naturally sweeter and cheaper than the large early‑season fruit, which reduces cooking time, energy costs and the need for extra sugar.

One article also describes a sugar‑free method called “janginizacja,” where strawberries are slowly cooked in their own juice for 60‑90 minutes without added sweeteners or thickeners. The technique relies on low heat, a wide heavy‑bottomed pot and regular stirring to achieve a thick, flavorful jam that can be used year‑round.
