Polish Home Cooking Recipes Spotlight Bean-Filled Pierogi and Lard-Fried Pork Cutlets

A new take on traditional Polish pierogi substitutes the usual meat, spinach or mushroom fillings with fresh yellow asparagus beans. The recipe combines the beans with boiled potatoes, twaróg cheese, smoked bacon and onions, creating a filling described as generating “noise in the city.” Instructions detail selecting firm beans, cooking them al dente, cooling and chopping before mixing with the other ingredients, then shaping and boiling the dumplings.

Another kitchen guide advises frying pork cutlets (schabowe) in rendered pork fat, smalec, to achieve a crisp, golden crust while keeping the meat juicy. Lard’s high thermal resistance helps seal the juices and prevents the coating from becoming soggy. The article recommends heating the pan properly, using a small amount of hot lard, avoiding overcrowding, and cooking each side just long enough for the breading to brown. It also notes the higher saturated‑fat content and suggests occasional consumption.
